Ingredients for Dot Cake

For avid bakers, you’ll likely have all these ingredients ready in your cupboard, but if you’re a newbie, here are the essentials you’ll need:

For the cake:

  • 250g unsalted butter, softened

  • 250g caster sugar

  • 4 large eggs

  • 250g self-raising flour

  • 1 tsp vanilla extract

  • 2 tbsp milk

For the buttercream:

  • 250g unsalted butter, softened

  • 500g icing sugar

  • 1 tsp vanilla extract

  • 2 tbsp milk

For decorating:

  • Hundreds and thousands (or nonpareils for the authentic "dotted" look)

How to Make a Dot Cake

  • Preheat your oven to 180°C (160°C fan) and grease two cake tins.

  • In a large mixing bowl, mix together the butter and sugar until light and fluffy.

  • Beat in the eggs one at a time, followed by the vanilla extract.

  • Add in the self-raising flour and milk and mix just until you have a smooth batter.

  • Pour the batter evenly between the cake tins.

  • Bake for 25 to 30 minutes. To check if fully baked, insert a skewer into the centre and check if it comes out clean.

  • Leave the cakes to cool completely before cutting and decorating.

  • To make the buttercream, beat the butter until smooth, then gradually add the icing sugar. Mix in the vanilla extract and milk until fluffy.

  • If making individual servings, cut circles of sponge to the size of a cup or ramekin then alternate layers of sponge and frosting in the container, finishing with a layer of frosting on the top. Alternatively, sandwich the cakes together with buttercream and cover the top and sides with an even layer of frosting.

  • Tip hundreds and thousands into a shallow bowl and dip the individual cakes in until the entire top is coated. For the full-size cake, sprinkle the hundreds and thousands over the top and sides in a thick layer.

Tips for Perfecting Your Dot Cake

  • Allow the cake layers to cool completely before frosting to prevent the buttercream from melting.
  • For full size cakes use a turntable and offset spatula for a smoother finish when applying buttercream.
  • Measure ingredients accurately for a light, even sponge.
  • If you’re baking regularly, investing in quality bakeware can improve heat distribution and help produce consistently great cakes.

This viral dot cake recipe is proof that impressive baking doesn’t have to be complicated. With a few simple ingredients, a splash of colour, and the right kitchen tools, you can create a stunning cake that’s tasty and fun.
