On the 23rd January 2024, the UK celebrates National Pie Day in recognition of the country’s rich culinary tradition. On this occasion, Britons come together to honour the flaky, savoury, and sweet wonders of pie-making. From the iconic steak and ale pie to the apple crumble pie, every flavour and filling takes centre stage. Families gather to share cherished recipes, bakeries showcase their finest creations, and communities revel in the joy of this quintessentially British dish. National Pie Day encapsulates the warmth, comfort, and cultural significance that pies bring to the heart of the United Kingdom.

Ingredients
65g unsalted butter
160g diced onion
680g boneless, skinless chicken thighs, cut into 2.5cm pieces
30g all-purpose flour
590ml chicken broth
60g sliced carrots
60g sliced celery
60g thawed frozen peas
1/2 tsp salt, or to taste
1/4 tsp freshly ground black pepper
1 pinch cayenne pepper, to taste
1 tsp fresh thyme
2 tsp water
Pre-made shortcrust pastry dough
1 egg, beaten
Method
STEP 1: Prepare the Pan and Cook Onions
Gather all ingredients. Preheat the oven to 220℃. In a 12-inch frying pan over medium-high heat, melt the butter. Add the diced onion and salt. Stirring often, cook the onions for approximately 3-4 minutes, until the onions begin to soften, become translucent, and the edges turn golden-brown, taking care to not burn.
STEP 2: Add the Chicken, Veg and Broth
Add chicken, and cook for approximately 3-4 minutes, until the chicken starts to brown in spots, stir regularly. Sprinkle flour over the mixture, then cook and stir for about 2 minutes. Pour in the broth and bring the mixture to a simmer. Scrape the bottom of the pan with a spatula and stir in carrots, celery, black pepper, and cayenne.
STEP 3: Reduce the Mixture
Cook the mixture for about 5-10 minutes, stirring occasionally, until it reaches your desired viscosity. To achieve a thick, sticky filling once baked, reduce the mixture until the sauce coats the back of a spoon. Alternatively, for a more liquid consistency, refrain from reducing the mixture at all. After turning off the heat, add in the peas and thyme into the mixture, and season to taste.
STEP 4: Roll Out Pastry
Roll out the pastry dough into a circular shape measuring approximately 14 inches wide, or about an inch larger than your pan. Fold over 1/2 inch of the dough along the entire circumference, then crimp the edge to create a decorated scalloped design. Then cut a 1-inch hole at the centre of the dough.
STEP 5: Cover and Cook
Place the pan on top of a sheet pan to catch any potential filling overflow in the oven. Gently place the dough over the filling, ensuring it’s centred, and lightly press the crust into the filling. Optionally, brush on an egg wash to the top for a crispy and golden top. Bake in the preheated oven for approximately 40 minutes, until crust is golden-brown and the filling is bubbling. Let it rest on the side for 5 minutes before serving, and enjoy!
