No matter what we do, on Boxing Day there always seem to be leftovers from the great roast. Rather than taking the easy option and cobbling together some turkey sandwiches and binning the veg, why not try something different?

Christmas Casserole Dish

The casserole is a staple of home cooking for a reason, it is extremely convenient as you only need to use one dish. The less cookware used, the less cleaning up and the more time you have to spend with family and friends.

A single BergHOFF pan can cook enough to serve many people so it is ideal for larger family gatherings. If you are having a small gathering, there will be even more leftovers! Casseroles store well both in the fridge and the freezer, with many tasting even better the following day as the ingredients and seasonings all meld together. With their warm and flavourful appearance and taste, casseroles provide a cozy eating experience that is perfect for the Christmas period.

Recipe

This particular casserole serves four people and can be done in one BergHOFF Non-Stick Saucepot

The Ingredients

  • 2 onions, finely chopped

  • One eating apple, cored and chopped

  • 2 tbsp of olive oil

  • 1 tsp of dried sage

  • 2 tbsp of plain flour

  • 300ml vegetable or chicken stock

  • 2 tbsp wholegrain mustard

  • 2tbsp runny honey

  • 400-500g turkey leftovers (shredded)

  • Approx 350g leftover roasted vegetables such as carrots, green beans, roast parsnips and roast potatoes.

Method

  • Start by frying the onion and apple in the olive oil until softened in a casserole or deep pan.

  • Stir in the sage for 1 minute, then stir in the flour. Then you can gradually stir in the stock followed by the mustard and the honey.

  • Bring your pot up to a simmer and stir in the turkey and roast veg ready to heat and serve.

  • Cover the pot and gently simmer for 15 minutes until the turkey leftovers are piping hot.

  • Season the dish with salt and mixed herbs before serving. Enjoy it with jacket or mashed potatoes, and add some stuffing if you fancy it.

What Else Can I Make With Christmas Leftovers?

With the combinations of meat, vegetables and extras like stuffing or Yorkshire puddings, the Christmas Dinner can easily be adapted to form several meals.

Christmas Leftover Pizza

If you’re not a fan of casserole or traditional stew, this might well be the dish for you. Using a gravy base (or a mixture of gravy and cranberry sauce) rather than the typical tomato sauce, you simply add Christmas leftovers like toppings and sprinkle melty cheese on top.

Festive Leftover Soup

If you’re feeling something a bit more comforting for a post-Christmas meal, a hearty soup is a good way to go. Simply chop your leftovers into small chunks, and use your gravy as part of your stock, and you’re good to go.

Christmas Leftover Risotto

Another excellent way to make use of uneaten roast turkey, veg, gravy and extras, the slow stirring involved in the creation of the risotto makes for a rich and creamy sauce. Combine your leftover ingredients with arborio, carnaroli or risotto rice with onions, garlic cloves and olive oil for a risotto to remember.

Christmas Leftover Pasties

Pasties are great as a leftover food option because you can add as many ingredients as you want without the result appearing or tasting like a thrown together mess. Using a shortcrust pastry, ensure your gravy is thick and that the ingredients themselves have been chopped into small chunks to ensure an even spreading of filling.
