How to make the most of your Christmas leftovers

When it comes to Christmas food, you probably make a lot. After all, it’s a celebration. With many of us having their first Christmas with friends and family in a few years, Christmas 2021 is set to be a big one for buying and cooking Christmas food. However, that tends to leave us all in the same situation. After you’ve had Christmas dinner, you’re left with a mountain of leftovers. While picking at cheese, and making enormous sandwiches is fun for a while, you can’t eat this way forever.
Here are 5 easy and funs ways to make the most of your Christmas leftovers.
1. Bubble & Squeak
First, let’s start with a classic. Bubble and Squeak is a great way to use up left over potatoes, vegetables (particularly sprouts or cabbage) and even turkey. Simply take your cold potatoes, whether they are mashed or roasted, and start to heat them up in your BergHOFF frying pan. As they heat, add your chopped vegetables, and combine to make a patty shape in the pan. Serve when it has browned around the edges. A fried egg on top is a popular addition.
2. Turkey Risotto
Everyone ends up with more turkey than they know what to do with. Using it up can be a long-term process. While many of us settle for the good old turkey sandwich, why not try something hearty and warming instead? Leftover turkey makes a great addition to a traditional risotto. Just add shredded cooker turkey to your risotto shortly before it is ready. Make sure it has warmed up, but otherwise, you won’t need to do much to your turkey. 3. Stir-Fried Sprouts
Christmas has a lot of flavours associated with it – rich cinnamon, hearty root vegetables, juicy roast meats. However, one flavour profile you should consider introducing to your Christmas is umami. Use up leftover Christmas dinner in an Asian stir-fry – carrots, sprouts and chestnuts all work perfectly. Simply use a little Asian flavouring – perhaps soy sauce, sesame oil and a little oyster sauce. 5. Leftover Curry
When you’ve been snacking on Christmas leftovers for a few days, you will probably reach the point of maximum cheese. This is where you simply cannot eat another morsel of anything traditionally Christmassy. Fortunately, there is an answer – the leftover curry. Whether you use a jar of curry sauce, or mix your spices yourself, turning leftover turkey and vegetables into a rich, spicy curry is a great way to break the repetition of the days between Christmas and new year.
6. Christmas Pudding Crumble
There is a lot of food on the average Christmas table. That means that by the time you get to pudding, you are likely to be full. As a result, you might end up with a lot of leftover pudding – particularly the Christmas pudding itself. This can be easily rectified, by turning an undesired Christmas pudding into a crumble. Simply blitz your leftover pudding in a food processor, and use it as a crumble over traditional fruit – apples, peaches and raisins are seasonally appropriate.
