The 16.7cm Aubergine Elements Large Santoku takes the same straight, wide-blade idea as the compact version and gives it substantially more cutting area for larger vegetables, fish and boneless meat.

The wider 16.7cm blade gives more cutting area and knuckle clearance than the smaller Santoku, while retaining the controlled, straight-edged feel associated with this knife shape.

The knife has a MoV stainless steel blade and an ABS handle.

The dimensions put the cutting edge in a predictable position relative to the hand, supporting steady movements through the food rather than sideways force.

The ABS handle is available in Aubergine, Khaki or Sand. Prompt cleaning is especially useful after acidic ingredients. A soft hand wash followed by drying and protected storage is gentler on the edge than repeated dishwasher cycles.
