Roasted Aubergine Caviar

Ingrediants
Olive oil
3 Garlic cloves
Salt
Pepper
2 Sweet Red Peppers
1 Aubergine
1 Red Onion
Tomato Puree
Crackers or Pitta bread
Method
Prepare your ingredients and preheat oven to 200 degrees Celsius. Mince the garlic cloves either by hand or using the multipurpose blade on your X5 Pro Food Processor. Chop all the vegetables into 1-inch pieces
Place all the vegetables onto an oven tray and cover with olive oil, garlic, salt, and pepper. Toss ingredients to cover and place inside oven until softened and browned 30-45 minutes)
Once cooked, place vegetables in a bowl, add 2 tablespoons of tomato puree and a dash of water. Then, using your X5 Pro processor and the multipurpose tool, pulse the vegetables until the mixture is blended but still chunky.
Serve your Roasted Aubergine Caviar topped with sunflower seeds (or similar) and crackers or pitta bread to top.
