Smoky Halloumi and Watermelon Skewers with Zesty Avocado Drizzle

Introduction

If you’re looking for a fresh barbecue recipe beyond the usual burgers and sausages, this vibrant BBQ recipe is perfect. It’s a healthy and flavourful dish that brings together sweet watermelon, salty halloumi cheese, and caramelised onion – all grilled to perfection. Ingredients (serves 4)

For the skewers 

  • 1 block halloumi cheese, cut into chunks

  • ¼ medium watermelon, cut into 1.5-inch cubes

  • 1 red onion, cut into wedges

  • 1 tbsp olive oil

  • 1 tsp smoked paprika

  • Juice of ½ lime

  • Freshly ground black pepper

  • Bamboo or metal skewers (if using bamboo, soak for 30 mins beforehand)

For the avocado drizzle 

  • 1 ripe avocado

  • Juice of 1 lime

  • 2 tbsp Greek yoghurt or coconut yoghurt (dairy-free option)

  • Small handful fresh mint

  • Pinch of chilli flakes (optional)

  • Salt to taste

  • 2–3 tbsp cold water (to thin as needed)

Instructions

  • Prep the skewers
    In a large bowl, toss the halloumi, watermelon and onion with olive oil, paprika, lemon juice and black pepper. Thread onto skewers, alternating the ingredients for a colourful effect.

  • Make the avocado drizzle
    Add the avocado, lemon juice, yoghurt, mint, chilli flakes and salt to your X5 Elite Food Processor Blend until smooth, adding water to achieve a drizzle-friendly consistency.

  • Grill the skewers
    Preheat your grill or Teppanyaki Plates to medium-high, or get your BBQ coals ready. Carefully place the skewers over the heat and cook for 2-3 minutes per side, turning gently until the halloumi is golden and the onions are nicely charred.

  • Serve
    Transfer to plates and serve warm, drizzled with your avocado sauce. Garnish with extra mint if desired. These skewers are packed with bold flavours and make a great centrepiece for any summer barbecue spread.
