Smoky Halloumi and Watermelon Skewers with Zesty Avocado Drizzle

It’s a healthy and flavourful dish that brings together sweet watermelon, salty halloumi cheese, and caramelised onion – all grilled to perfection. Ingredients (serves 4)
For the skewers
1 block halloumi cheese, cut into chunks
¼ medium watermelon, cut into 1.5-inch cubes
1 red onion, cut into wedges
1 tbsp olive oil
1 tsp smoked paprika
Juice of ½ lime
Freshly ground black pepper
Bamboo or metal skewers (if using bamboo, soak for 30 mins beforehand)
For the avocado drizzle
1 ripe avocado
Juice of 1 lime
2 tbsp Greek yoghurt or coconut yoghurt (dairy-free option)
Small handful fresh mint
Pinch of chilli flakes (optional)
Salt to taste
2–3 tbsp cold water (to thin as needed)
Instructions
Prep the skewers
In a large bowl, toss the halloumi, watermelon and onion with olive oil, paprika, lemon juice and black pepper. Thread onto skewers, alternating the ingredients for a colourful effect.Make the avocado drizzle
Add the avocado, lemon juice, yoghurt, mint, chilli flakes and salt to your X5 Elite Food Processor Blend until smooth, adding water to achieve a drizzle-friendly consistency.Grill the skewers
Preheat your grill or Teppanyaki Plates to medium-high, or get your BBQ coals ready. Carefully place the skewers over the heat and cook for 2-3 minutes per side, turning gently until the halloumi is golden and the onions are nicely charred.Serve
Transfer to plates and serve warm, drizzled with your avocado sauce. Garnish with extra mint if desired. These skewers are packed with bold flavours and make a great centrepiece for any summer barbecue spread.
