Make Summer the time for a culinary change
As summer comes around, we tend to start thinking about changing what we eat. The things that hit the spot the most in December – stews, soups and hearty roasts – don’t tend to be as popular in the warmer months of the year. However, these are cornerstones of British Cuisine. We don’t have the traditional range of summer friendly dishes that we can turn to in our national repertoire. So, what summer recipes can you add to your personal recipe book – and can a new set of pans actually help you changes your summer diet?
Summer Recipes
What do summer recipes tend to have in common with each other? They are lighter – often do not depend too heavily on warm or hot sauces, and can easily be eaten outside. Summer recipes also often make use of the fruits and vegetables that are growing and being harvested during the summer months. Making the most of the summer seasonal ingredients means taking advantage of a wider range of cooking techniques than you might be used to using. A perfect way to encourage you to do this is with a new set of pans and cooking equipment.

Summer Strawberry Tart
Ingredients:
1 vanilla pod
100 g golden caster sugar
600 g large ripe strawberries
1 x 320 g pack of ready-rolled all-butter puff pastry
70 ml Pimm's
vanilla ice cream , to serve
Instructions:
Preheat the oven to 220ºC.
Split the vanilla and scrape into a 26cm frying pan on a medium heat, then add the pod, Pimm’s and the sugar.
Cook for 3 minutes, or until you have a thick caramel, then remove from the heat.
Remove the stems from the strawberries, and add them to the pan.
Unroll the pastry and lay over the strawberries and caramel mixture. Use a wooden spoon to push the edges into the pan. Trim off the excess pastry to patch up any holes.
Bake in the oven for 25 minutes, or until golden.
Remove the pan from the oven turn the tart out onto a plate or a board slightly bigger than the pan.
Cut into 8 and serve with vanilla ice cream.
